Talaş Böreği: Flaky Pastry with a Savory Meat Filling

Talaş Böreği, also known as Turkish meat pastry, is a delightful dish that combines layers of flaky puff pastry with a savory meat filling. Perfect as a main dish or a hearty snack, Talaş Böreği is loved for its rich flavors and satisfying texture. This recipe will guide you through making this traditional Turkish pastry at home.

Ingredients For the Pastry:

1 package puff pastry (about 1 lb)

For the Filling:

1 lb ground beef or lamb
1 large onion, finely chopped
1/2 cup peas (optional)
1 carrot, finely diced (optional)
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
1 tbsp tomato paste
1 tsp ground cumin
1 tsp paprika
Salt and pepper to taste
1/4 cup olive oil

For the Egg Wash:

1 large egg, beaten

Instructions:Prepare the Filling:

Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened.
Add the ground beef or lamb to the skillet and cook until browned. Stir in the tomato paste, cumin, paprika, salt, and pepper. Mix well to combine.
If using, add the peas and diced carrot. Cook for an additional 5-7 minutes until the vegetables are tender and the flavors are well combined.
Remove from heat and stir in the chopped parsley. Allow the filling to cool slightly.

Prepare the Pastry:

Preheat your oven to 375°F (190°C).
Roll out the puff pastry on a lightly floured surface. Cut the pastry into squares, about 4 inches on each side.

Fill the Pastry:

Place a spoonful of the meat filling in the center of each pastry square.
Fold the corners of the pastry over the filling to form a neat package, sealing the edges by pressing them together. Place the filled pastries on a baking sheet lined with parchment paper.

Bake The Talaş Böreği:

Brush the tops of the pastries with the beaten egg for a golden finish.
Bake in the preheated oven for 20-25 minutes, or until the pastries are puffed and golden brown.

Serve:

Allow the Talaş Böreği to cool slightly before serving. Enjoy them warm, as they are delicious right out of the oven.
