Tandır Kebabı Recipe: A Traditional Turkish Slow-Cooked Delight

Tandır Kebabı is a traditional Turkish dish, renowned for its tender, slow-cooked meat that falls off the bone. The name “Tandır” refers to the ancient cooking method where meat is slow-roasted in a clay oven, allowing the flavors to develop and the meat to become incredibly succulent. This dish, typically made with lamb, is marinated with a blend of simple spices and cooked to perfection, resulting in a melt-in-your-mouth experience. Tandır Kebabı is often served with rice or flatbread, making it a hearty and flavorful meal that’s perfect for special occasions or family gatherings.

Ingredients:

  • 1.5 kg lamb (with bone)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • 1 cup water
  • 1 bay leaf

Instructions:

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, mix the olive oil, salt, pepper, minced garlic, and thyme. Rub this marinade over the lamb, ensuring it’s well-coated.
  3. Place the lamb in a deep oven tray, add the water and bay leaf, and cover tightly with aluminum foil.
  4. Roast in the oven for about 3-4 hours, basting occasionally, until the meat is tender and easily falls off the bone.
  5. Remove the foil in the last 30 minutes to allow the lamb to brown.
