Fig Turkish Delight: A Sweet and Chewy Delight

Fig Turkish Delight, or “İncirli Lokum,” brings together the sweet, rich flavor of figs with the traditional chewy texture of Turkish Delight. This delightful confection is perfect for fig lovers and offers a unique twist on the classic treat. Follow this simple recipe to create your own batch of delicious Fig Turkish Delight.

Ingredients:

4 cups granulated sugar
1 1/2 cups water
1 cup dried figs, finely chopped
1 tbsp lemon juice
1 cup cornstarch
1 tsp cream of tartar
2 1/2 cups water
1/2 cup powdered sugar (for dusting)
1/4 cup cornstarch (for dusting)
Optional: A few drops of fig extract for enhanced flavor

Instructions Prepare the Syrup:

In a medium saucepan, combine the granulated sugar, 1 1/2 cups of water, and lemon juice. Bring to a boil, stirring occasionally until the sugar dissolves. Reduce heat and simmer until the mixture reaches 240°F (115°C) on a candy thermometer.

Prepare the Starch Mixture:

In another large saucepan, mix the cornstarch, cream of tartar, and 2 1/2 cups of water. Cook over medium heat, stirring constantly until the mixture thickens and becomes gluey.
Combine the Mixtures:

Gradually pour the hot sugar syrup into the thickened starch mixture, stirring continuously. Reduce heat and cook for about an hour, stirring frequently, until the mixture thickens and becomes translucent. Add the chopped figs and fig extract if using, and stir well to combine.

Set the Turkish Delight:

Line a baking dish with parchment paper and lightly grease it. Pour the fig mixture into the dish, spreading it evenly. Let it cool and set for at least 4 hours or overnight.

Fig Turkish Delight Cut and Coat:

Once set, dust a cutting board with a mixture of powdered sugar and cornstarch. Turn the Turkish Delight out onto the board and cut into small squares.
Roll each piece in the powdered sugar and cornstarch mixture to prevent sticking.

Garnish and Serve:

Arrange the Fig Turkish Delight on a serving platter and enjoy its rich, fruity flavor.
